Tropical Brunch with Strawberry Poppyseed Salad

Happy Wednesday! Today I’m sharing one of my favorite spring salads. A friend made this strawberry poppyseed salad for me over 10 years ago and I’ve been serving it ever since! It’s the perfect addition to your spring menu, whether it be a baby or bridal shower, Sunday brunch, or lunch with your favorite girlfriends.

But before we get to the recipe, I just have to share these cute melamine plates I found at TJ Maxx. I’ve always loved British Colonial and tropical-influenced decor, and I can’t get enough of the cute pineapple and palm leaf prints I’ve been seeing everywhere lately!  Combined with an inexpensive burlap charger (similar ones here) and large faux palm leaves, it’s the perfect addition to my rustic white breakfast table.pineapple plate

 

I also love this decorative bowl I received as a wedding gift from my friend who spent time in the Phillipines. I’m still using it almost 20 years later!

Strawberry Poppyseed Salad

  • 1 head of romaine
  • 1 bag of fresh spinach leaves
  • 1 red onion, sliced thin
  • package of strawberries, sliced
  • 1 small block of baby swiss cheese, cut into small cubes
  • 1/2 can of cashews
  • Marzetti’s poppyseed dressing

Optional: Sometimes I’ll throw in some leftover grilled chicken for a more filling main dish.

Normally I’m a fan of preparing one’s own dressing (usually healthier). However, there are some cases where a premade version is better than what I could make at home – and in that case I’ll stick with the store bought version! I love Marzetti’s poppyseed dressing. It’s rich and creamy so you don’t need to add very much to get wonderful flavor.

I should also note that while I did try to specify amounts to the recipe above, I’m more of a “throw stuff in a bowl and see how it turns out” kind of gal. So the amounts listed are just approximate. As you can see from the photo below, I just used one bag of spinach and left the romaine lettuce out all together.

The best thing about easy salads like this is that you can always tweak them. As I’m looking at the photo above, I just had a thought that blueberries might be a nice colorful addition as well!
